I stole this recipe from my sister (she told me it was fine)! 🙂 I was at her house one Sunday for a get-together (we have those a lot), and she had a pan full of these babies in the oven cooking. When she pulled them out, they looked amazing! I mean, bacon and cream cheese…. really? Anything with bacon and cream cheese has got to be delicious! Right?

Before she could even get these  Jalapeno Poppers on a platter, they were half gone! Everyone loved them, even the teenagers!
Appetizers are always a hit!

These are seriously some easy appetizers to make, and they come together really fast. All you need are just a few simple ingredients–jalapeno peppers or banana peppers, cream cheese, cheese, shrimp, and bacon. That’s it! There are no exact measurements here for each pepper, so you be the judge on how much cream cheese and shrimp you want on each pepper. If you don’t like shrimp–leave it off. It will still be delicious.

If you have never made jalapeno poppers at home before, give them a try. I promise they will not disappoint you or your guest. They will either be asking you for the recipe or asking you to make a 2nd batch.

Ingredients Needed for the Best Bacon Wrapped Shrimp Jalapeno Poppers

Jalapenos–No surprise here. Jalapenos are the star of the show. Make sure you use peppers that are large enough to stuff. Small peppers make it difficult to get all of the good stuff inside.
Cream Cheese— Room temperature cream cheese is a must for mixing and stuffing.
Cheese–I like to use cheddar cheese for this recipe but feel free to use any kind of cheese mixtures such as Mexican Blend or Pepper Jack Cheese. You might also decide to mix it up and add several kinds of cheese. The choice is yours.
Shrimp– small shrimp work the best. If the peppers are long, I have cut the shrimp in half to fit on the peppers. The shrimp will cook as the pepper cooks.
Bacon-Each pepper is wrapped in a piece of bacon for baking. 

How to make Bacon Wrapped Shrimp Jalapeno Poppers

In a bowl, mix together the cream cheese, cheese, and seasonings.

Take 20 jalapeno peppers or banana peppers and slice in half lengthwise. Scrape the seeds and the ribs out of each pepper. Use gloves because the oil in the peppers will burn your hands.

Stuff each pepper with the cream cheese mixture.

Place a shrimp on top of the stuffed peppers and wrap with a half piece of bacon.

Place on a baking sheet and bake. Easy Peasy! In 20-25 minutes, you will have a pan full of Bacon Wrapped Shrimp Jalapeno Poppers!  Enjoy!!

How Do You Cut Jalapeno Peppers for Stuffing?

Wash the peppers first. Wearing gloves, slice each pepper lengthwise. Remove the seeds and membrane.

Tips for Making the Best Stuffed Jalapeno Poppers

Wear gloves and do not touch your eyes or face.
Remove the seeds and membrane from the peppers to keep them mild.
Make sure the cream cheese is room temp before you begin to mix the ingredients.

Can you make Stuffed Jalapeno Peppers in Advance?

Yes, you can assemble the stuffed shrimp jalapeno poppers a day ahead. Store in a covered container in the refrigerator and bake before serving.

Ingredients
  

  • 20 jalapeno peppers banana peppers will work fine
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon each pepper and garlic powder
  • 1/2 pound shrimp
  • 1-2 pounds bacon If peppers are small, cut each piece of bacon in half.

Instructions
 

  • Preheat oven to 400 degrees. Line a baking sheet with foil. Place a wire rack on top of foil lined pan. OR If you don’t have a wire rack, no problem, just cook on the foil lined pan.
  • In a bowl, mix the cream cheese, cheddar cheese and seasoning together.
  • Wearing gloves–Cut each jalapeno pepper (or banana pepper) in half lengthwise and seed each one. Scrape the ribs out as well.
  • Stuff each pepper with the cream cheese mixture.
  • Place a shrimp on top of the cream cheese.
  • Wrap each pepper with 1/2 slice of bacon.
  • Put in oven and bake at 400 degrees for 20-25 minutes or until bacon is crisp.

    This has to be the classiest, most flavorful version of poppers that I’ve ever made. They were so delicious, and the bacon really set off the shrimp.
