I love tomatoes, and during the summer, I eat a lot of them. I plant many tomatoes during the spring, hoping they will produce enough for canning, sandwiches, salads, and frying (green). There is not a day that goes by that I don’t eat a tomato during the summer months.

I was introduced to this dish by my sister, Angie. Caprese Stacks showed up on our family table one night, and it went perfectly with our Eggplant Parmesan. It was assembled in minutes and devoured in no time.

This dish is perfect for those nights you want a little something extra to go with dinner. Your family will undoubtedly be impressed when this shows up on your table. But, you will definitely wow your guest when you bring this out as an appetizer for a cookout or dinner party.

Ingredients in Tomato Caprese Stacks

Fresh tomatoes
Mozzarella Slices
Basil leaves
salt and pepper
olive oil
Balsamic Glaze

Tomatoes: Ideally, this dish is great to serve during the summer months when tomatoes are at their peak. Here in the south, we usually have tomatoes on the vine until October. I have used a variety of tomatoes for this recipe, and they have all been fine and held up well on the plate.

Mozzarella Slices: Mozzarella Cheese slices are best for this recipe. Look for a good brand. You want a good creamy cheese and not a rubbery tasting cheese.

Basil Leaves: Fresh is best. Again summertime is the best time for freshness, but I have found good basil leaves in the grocery store even during the winter months. Basil is a must for this recipe.

Balsamic Glaze: This is like total yum in a bottle. Thicker than Balsamic Vinegar and a different taste as well. Drizzle this over your salad, fries, burgers, fish, or chicken. Try some soon. This is popular in my kitchen.

How to Make Caprese Tomato Stacks

Slice tomatoes 1/4″ thickness.
Place Mozzarella slices on top of tomatoes.
Add basil.
Salt and pepper to taste.
Drizzle with olive oil and balsamic glaze.

What to Serve with Caprese Stacks

Perfect for a cookout side, an appetizer, side dish to an Italian meal, or just alone for a light alternative for lunch.

Anything Italian goes great–spaghetti and eggplant parmesan are wonderful with this dish. Italian Sausage and Pasta goes great with Caprese Tomato Stacks.

Anything cooked on the grill or even slow cooked such as my bbq ribs goes great with this fresh Caprese Stacks.

Tips for Feeding a Crowd

This dish is easily adapted to feed a crowd. Instead of using sliced tomatoes, use cherry tomatoes, mozzarella balls, and chopped basil. Add everything to a bowl, drizzle with olive oil, sprinkle with salt and pepper, and add a splash of balsamic glaze.
