Classic Chicken Salad
Classic Chicken Salad is an Awesome combination of chicken, mayonnaise, celery, onion, and seasonings. The flavor and crunch explode in your mouth.
Of all of the chicken salads I have ever eaten, this Classic Chicken Salad is still my favorite. It’s simple yet delicious and is perfect for potlucks, barbecues, or just because you like chicken salad.
There is nothing quite like a chicken salad sandwich with lots of mayonnaise. Be sure to keep this recipe handy for those times when you have company coming over, and you need something special to serve them. This recipe will not disappoint your guest or your family.
Friends coming over to watch the ball game? Need a dish for tailgating? This recipe comes together fast and will feed a crowd. Serve as sandwiches, with crackers, or on a bed of lettuce. I like it any way you serve it! 🙂
To make this recipe easier, pick up a rotisserie chicken, or use some leftover grilled chicken. I prefer to use chicken breast or thighs. You can use canned chicken if you are in a pinch, but it will NOT taste the same.
With this recipe, I did keep the add-ins to a minimum. Personally, I like to add some grapes, dried cranberries, and pecans, but my daughter does not particularly care for these. Since she did ask me to make this chicken salad, I decided I would leave those out for this time. 🙂
How to Make Classic Chicken Salad
1 cup mayonnaise
2 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon Zatarains’s Creole Seasoning
3 lbs. chicken, boiled, chopped
1 cup celery, chopped
1 cup onion, diced
Dice cooked and cooled chicken. Chop the celery and dice the onion.
In a small bowl, combine mayonnaise, lemon juice, salt, pepper, and seasoning; mix well. Add chicken, celery, and onion; mix gently. Add more mayonnaise if needed, and to meet your liking. Serve with crackers, toasted bagels, as a sandwich, or on a bed of lettuce.
