Stovetop Red Beans and Rice
Need a One Pot meal to feed a crowd in less than an hour? Smoked sausage, onions, bell pepper, celery, garlic, diced tomatoes, kidney beans, and rice will undoubtedly please anyone!
I made this dish last night for my family, and it was a hit! Everything cooked in one pot and was fabulous! The onions, garlic, and celery sauteed together gave this dish so much flavor, and they blended wonderfully. And throw in a little creole seasoning… Well, I’ll just leave it at that.
Now, before I get in trouble with some people–I know I am not using “true” red beans. Yes, I did use red kidney beans. Yes, they were just as good. Please feel free to use red beans in your dish if you so desire. This is my version, and it was quite delicious!
I am known in my house for making one pot meals. Less to clean up later, right? I mean after spending an hour cooking who wants to spend another hour cleaning up? One pot dinners are definitely a win-win!
Stovetop Red Beans and Rice takes under an hour to cook and tastes just like you fussed over it all day. This makes an easy and tasty weeknight dinner or will also feed a crowd on the weekend! We had enough leftovers from this meal to eat again later in the week. So easy to make and delicious to eat!
How do you make Red Beans and Rice?
My version of Red Beans and Rice is very easy. You will have dinner cooked and on the table in about an hour or less. This is now on my dinner rotation for weeknight meals and hopefully it will be on your rotation as well.
Add sliced sausage to a large skillet. Cook 7-8 minutes. Drain grease leaving 2 tablespoons of grease in the skillet. Add onion, bell pepper, celery, and garlic. Cook 8-10 minutes, or until onions are translucent. Add diced tomatoes, kidney beans, and broth. Add creole seasoning. Stir. Bring to a boil over medium heat. Stir in rice making sure rice is down in the broth. Cover. Reduce heat to simmer and cook about 15 minutes or until rice is tender.
