I’ve had a taste for banana nut bread lately. I bought bananas last week at the grocery store and waited–what seemed like forever– for them to get good and ripe.

After patiently waiting for an eternity, my bananas were perfectly ripe and ready to be transformed into mouthwatering Banana Nut Bread. Finally, after 4 days, the bananas were ready for me to mix up the ingredients, which was a breeze, and before I knew it, the batter was ready to be poured into the loaf pan.   3. Mash and Add Bananas: Mash the ripe bananas and add them to the sugar, shortening, and egg mixture. Mix until evenly incorporated.

  • Nuts: –Use fresh pecans.  The crunch of pecans is one of the best things about this recipe. Feel free to swap out pecans for walnuts in this recipe.
  • Mixing: — Fold the dry ingredients into the wet ingredients and mix only until moistened. You do not want to over-mix.
  • Loaf Pan: — Use a well-greased and floured loaf pan. You might also line your pan with parchment paper.

  2. I made this today with my 1.5 yr old grandson. We were fast and loose with the measuring, flour and sugar everywhere! He learned to mush the bananas, and take some of the walnuts. Doubled and used butter, made a load of muffins, 20 min. Perfect!

  7. I left in the oven for an hour as it said. It tasted dry and a little burned. I’m not sure if this is due to living in high elevation. I will try it again and bake it for 45 minutes instead. Aside from this issue, it did taste good.

    1. Yes, all ovens are different. Try checking on your bread at the 45 minute mark and then every few minutes after that. It really is a good recipe. Just make a few adjustments with the time for your oven and you should be good. Thanks for the comment.

    I find that the best way to ensure that you always have these overripe extra sweet bananas, is to peel them and pop them in a Ziploc bag in the freezer. My family loves banana bread, so will be trying this!
