Chocolate Covered Peanut Butter Balls

Chocolate Covered Peanut Butter Balls are very satisfying and super-rich in flavor. One ball goes a long way and will satisfy your sweet tooth.

Ingredients

  • 1 cup butter softened at room temperature
  • 2 cups peanut butter creamy
  • 1 tablespoon vanilla
  • 5 cups powdered sugar
  • 1 24 ounce package Almond Bark Chocolate Coating white or dark chocolate (or both)

Instructions

  • Prepare the peanut butter mixture. In a large mixing bowl, mix butter, 2 1/2 cups powdered sugar, peanut butter, and vanilla. The mixture will become stiff. 
  • Gradually add the rest of the powdered sugar and mix well.
  • Lay out parchment paper or wax paper for the rolled balls.
  • Shape the peanut butter balls into about one inch balls or use a small cookie scoop to make all of the balls uniform size. I usually place these on the prepared paper. Set aside.
  • For the next step, you will need to work quickly. Melt chocolate over double boiler or microwave. Follow the directions on the package. Dip each ball into the melted chocolate. (See notes below) Place the balls on the prepared paper and allow to dry.

Notes

Use a fork to dip the balls into the chocolate. Place the balls on top of a fork and dip into the melted chocolate. Allow some of the chocolate to drip off before placing it on the wax paper. You can use a toothpick to help slide the balls off of the fork. Your finger will work, but it is a little messy.
I usually mix the ingredients by hand and do not use a hand mixer or electric mixer.
