Crock Pot Cream Cheese Chicken Chili

Ingredients

  • 4 boneless chicken breasts or 6-8 chicken tenders
  • 1 can whole kernel corn undrained
  • 1 can black beans drained and rinsed
  • 1 can rotel tomatoes undrained
  • 1 can diced tomatoes
  • 1 package dry Ranch Dressing Mix
  • 1 package chili powder
  • 2 cups chcken broth
  • 1 8 oz. package cream cheese
  • 1 cup shredded cheese

Instructions

  • Place chicken in the crockpot. Add corn, black beans, Rotel tomatoes, diced tomatoes, dry ranch mix, chili powder, and chicken broth. Stir well.
  • Add cream cheese to the top of the mixture. Add lid and cook on low for 6-8 hours.
  • After the cooking time has been completed, take out the chicken, shred with a fork, and return to the crockpot. Mix well.
  • Add shredded cheese to the top of each bowl. Serve with crackers or cornbread.
