Salad Ingredients
8cupsbroccoli floretsfinely chopped
1/2mediumred onionchopped
1cupdried cranberries
3/4cupdried roasted sunflower seeds
1poundbaconcooked and crumbled
1 1/2cupsshredded cheddar cheese
Dressing
1 1/2cups mayonnaise
1/3cupsugar
2TablespoonsApple Cider Vinegar
Instructions
Cook the bacon, crumble, and set aside.
Chop the broccoli into small pieces.
Add all of the salad ingredients to a medium sized bowl--except the bacon. Stir until everything is mixed well.
In a small bowl whisk the mayonnaise, sugar, and vinegar until smooth. Spoon the dressing over the salad mixture and stir until evenly coated.
Refrigerate for several hours or overnight. Before serving-add the bacon and stir well.
Notes
Wait until you are ready to serve to add the bacon. This should keep it from getting soggy.
To Make in Advance: Prep the ingredients and store the salad in a separate container in the refrigerator.

When you are ready to serve the salad, combine the salad ingredients in a large bowl, add the creamy dressing, mix well, and top with bacon crumbles.
