Ingredients
2Tablespoonsoilreserved from cooking sausage
1 1/2poundssmoked sausagesliced into 1/2" slices
1onionchopped
1green bell pepperseeded and chopped
2ribscelerychopped
2clovesgarlicminced
1 14.5 ouncediced tomatoes
4cupschicken brothI used a 32oz. carton of broth
215 oz cansred kidney beansdrained
1/4 teaspoonCreole Seasoning
2 1/2cupsinstant rice
Instructions
Add sliced sausage to a large skillet. Cook 7-8 minutes. Drain grease leaving 2 tablespoons of grease in the skillet.
Add onion, bell pepper, celery, and garlic. Cook 8-10 minutes, or until onions are translucent.
Add diced tomatoes, kidney beans, and broth.
Add creole seasoning. Stir. Bring to a boil over medium heat.
Stir in rice making sure rice is down in the broth. Cover. Reduce heat to simmer and cook about 15 minutes or until rice is tender.
