Stovetop Red Beans and Rice | My Version

Need a One Pot meal to feed a crowd in less than an hour? This Stovetop Red Beans & Rice is perfect for any night of the week. Smoked sausage, onions, bell pepper, celery, garlic, diced tomatoes, kidney beans, and rice will undoubtedly please anyone!

Ingredients

  • 2 Tablespoons oil reserved from cooking sausage
  • 1 1/2 pounds smoked sausage sliced into 1/2" slices
  • 1 onion chopped
  • 1 green bell pepper seeded and chopped
  • 2 ribs celery chopped
  • 2 cloves garlic minced
  • 1 14.5 ounce diced tomatoes
  • 4 cups chicken broth I used a 32oz. carton of broth
  • 2 15 oz cans red kidney beans drained
  • 1/4 teaspoon Creole Seasoning
  • 2 1/2 cups instant rice

Instructions

  • Add sliced sausage to a large skillet. Cook 7-8 minutes. Drain grease leaving 2 tablespoons of grease in the skillet.
  • Add onion, bell pepper, celery, and garlic. Cook 8-10 minutes, or until onions are translucent.
  • Add diced tomatoes, kidney beans, and broth.
  • Add creole seasoning. Stir. Bring to a boil over medium heat.
  • Stir in rice making sure rice is down in the broth. Cover. Reduce heat to simmer and cook about 15 minutes or until rice is tender.
