Slow Cooker Sausage Tortellini Soup

A super easy tortellini soup crock pot meal that is not only easy and delicious but is pure comfort food for any time of the year. It's loaded with hearty ingredients- sausage, cheese tortellini, spinach, tomatoes, onions, carrots, and celery.

Ingredients

  • 1 tablespoon oil
  • 2 pounds ground pork sausage I used mild and hot
  • 1 large onion diced
  • 2 cups carrots diced
  • 1 cup celery diced
  • 1 tablespoon garlic minced
  • 6 cups chicken stock or broth
  • cups whole milk
  • 1 (8oz.) cream cheese cut into chunks
  • 1 (14oz.) can diced tomatoes
  • 1 (10oz.) frozen spinach
  • 1 teaspoon each salt, pepper, dried rosemary
  • 2 (9oz.) packages refrigerated cheese tortellini

Instructions

  • In a large skillet over medium-high heat, add oil. Add the sausage, onion, carrots, celery, and garlic. Cook until the sausage is no longer pink, breaking it into bite-sized pieces as it browns.
  • Once the sausage has cooked, using a slotted spoon, place the cooked sausage and vegetables in the slow cooker.
  • Add the rest of the ingredients to the slow cooker EXCEPT the tortellini. Stir well. Add the lid. Cook. Cook 4-5 hours on high or 6-8 hours on low.
  • 30 minutes before serving, remove the lid and stir it well. Add the tortellini and stir again. Add the top and continue to cook for 30 minutes.
  • Serve immediately.

 Cook 4-5 hours on high or 6-8 hours on low.
Add the tortellini 30 minutes before serving.
