A super easy tortellini soup crock pot meal that is not only easy and delicious but is pure comfort food for any time of the year. It's loaded with hearty ingredients- sausage, cheese tortellini, spinach, tomatoes, onions, carrots, and celery.

Ingredients
1tablespoon oil
2poundsground pork sausageI used mild and hot
1largeoniondiced
2cupscarrotsdiced
1cupcelerydiced
1tablespoongarlicminced
6cupschicken stock or broth
2½cupswhole milk
1(8oz.)cream cheesecut into chunks
1(14oz.) candiced tomatoes
1(10oz.)frozen spinach
1teaspoon eachsalt, pepper, dried rosemary
2(9oz.) packagesrefrigerated cheese tortellini
Instructions
In a large skillet over medium-high heat, add oil. Add the sausage, onion, carrots, celery, and garlic. Cook until the sausage is no longer pink, breaking it into bite-sized pieces as it browns.
Once the sausage has cooked, using a slotted spoon, place the cooked sausage and vegetables in the slow cooker.
Add the rest of the ingredients to the slow cooker EXCEPT the tortellini. Stir well. Add the lid. Cook. Cook 4-5 hours on high or 6-8 hours on low.
30 minutes before serving, remove the lid and stir it well. Add the tortellini and stir again. Add the top and continue to cook for 30 minutes.
Serve immediately.
