Ingredients

  • 4-6 large Peaches peeled and sliced
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon corn starch start with 1/2 tablespoon and add more if needed
  • 1/2 teaspoon vanilla

Instructions

  • Peel, slice, or dice peaches into small to medium chunks. Place in a medium bowl, add lemon juice and stir. Cover with sugar. Place into the refrigerator for at least an hour or two. This will help to release some of the juice from the peaches.
  • In a skillet over medium heat, add peaches and sugar. Heat for 10 minutes to soften peaches. Add vanilla. Add cornstarch to thicken the juice. Stir continuously. It will thicken immediately.
  • Serve over the top of ice cream. Refrigerate any leftovers. So delicious!

Notes

After adding sugar to the peaches, place peaches in the refrigerator for at least an hour before cooking. This will release some juices.
