Squash and Onions {Southern Style}

This Southern Style Skillet Squash and Onions recipe is easy, delicious, and sure to become a favorite summer side dish. It's not fancy, but it's good!

Ingredients

  • 2.5-3 pounds yellow squash sliced into rounds
  • 1 onion diced
  • 2 tablespoons oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¾ cup water

Instructions

  • Dice the onion and slice the squash. Set aside.
  • Add oil to the bottom of a medium cast-iron skillet.
  • Turn heat to medium and add onion, squash, water, salt, and pepper to the skillet.
  • Stir well and cook until desired tenderness stirring every 10 minutes. I usually cook for 45 minutes to an hour. 

Notes

Notes: Any medium skillet will work if you don't have a cast-iron skillet.
The longer you cook, the more tender and softer it gets. Begin checking for tenderness at the 30 minute mark. I usually cook for 45 minutes to an hour.
If your skillet runs out of water before desired tenderness, add more. I usually add 1/4 cup at a time.
I like my squash cooked down a lot and a little mushy. Cook until you get your desired tenderness.
