Ingredients
2.5-3poundsyellow squashsliced into rounds
1oniondiced
2tablespoonsoil
1teaspoonsalt
½teaspoonpepper
¾cupwater
Instructions
Dice the onion and slice the squash. Set aside.
Add oil to the bottom of a medium cast-iron skillet.
Turn heat to medium and add onion, squash, water, salt, and pepper to the skillet.
Stir well and cook until desired tenderness stirring every 10 minutes. I usually cook for 45 minutes to an hour.
Notes
Notes: Any medium skillet will work if you don't have a cast-iron skillet.The longer you cook, the more tender and softer it gets. Begin checking for tenderness at the 30 minute mark. I usually cook for 45 minutes to an hour.If your skillet runs out of water before desired tenderness, add more. I usually add 1/4 cup at a time.I like my squash cooked down a lot and a little mushy. Cook until you get your desired tenderness.
