Ingredients

  • 1 can light red kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1/2 small onion diced
  • 2 tomatoes diced
  • 1/3 cup seasoned rice vinegar
  • 1/3 cup olive oil
  • salt and pepper to taste

Instructions

  • In a serving bowl, add the drained and rinsed beans, onion, and tomatoes.
  • Mix together the vinegar and oil and pour over the bean mixture. I
  • If desired, add salt and pepper to taste.
  • Let sit in the refrigerator in a well-covered container for several hours. The longer it sits, the better it tastes.
