Stovetop Sausage, Potato, and Corn Soup

Ingredients

  • 2 pounds ground sausage I used 1 mild and 1 hot
  • 1 onion
  • 5 cups potatoes, peeled and cubed I used frozen natural cut fries cut in half
  • 2 cups baby carrots, cut in half or 2 large carrots, sliced or diced
  • 1 can whole kernel corn
  • 5 cups chicken broth
  • 2 cups water
  • 1 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup milk
  • 2 tablespoons corn starch
  • 1 cup shredded cheddar cheese

Instructions

  • In a large stock pot, brown sausage and onion. Drain.
  • To the pot, add potatoes, carrots, corn, broth, water, garlic powder, and red pepper. Bring to a boil then reduce heat and simmer 30-45 minutes or until vegetables are tender.
  • Mix together milk and corn starch and slowly pour into the soup. Stir well. Simmer for 5 more minutes.
  • Top with cheddar cheese. Serve with cornbread.
