Ingredients
2poundsground sausageI used 1 mild and 1 hot
1onion
5cupspotatoes, peeled and cubedI used frozen natural cut fries cut in half
2cupsbaby carrots, cut in halfor 2 large carrots, sliced or diced
1canwhole kernel corn
5cupschicken broth
2cupswater
1teaspoongarlic powder
1/4 teaspooncrushed red pepper flakes
1cupmilk
2tablespoonscorn starch
1cupshredded cheddar cheese
Instructions
In a large stock pot, brown sausage and onion. Drain.
To the pot, add potatoes, carrots, corn, broth, water, garlic powder, and red pepper.
Bring to a boil then reduce heat and simmer 30-45 minutes or until vegetables are tender.
Mix together milk and corn starch and slowly pour into the soup. Stir well. Simmer for 5 more minutes.
