Bacon Wrapped Shrimp Jalapeno Poppers

Ingredients

  • 20 jalapeno peppers banana peppers will work fine
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon each pepper and garlic powder
  • 1/2 pound shrimp
  • 1-2 pounds bacon If peppers are small, cut each piece of bacon in half.

Instructions

  • Preheat oven to 400 degrees. Line a baking sheet with foil. Place a wire rack on top of foil lined pan. OR If you don't have a wire rack, no problem, just cook on the foil lined pan.
  • In a bowl, mix the cream cheese, cheddar cheese and seasoning together.
  • Wearing gloves--Cut each jalapeno pepper (or banana pepper) in half lengthwise and seed each one. Scrape the ribs out as well.
  • Stuff each pepper with the cream cheese mixture.
  • Place a shrimp on top of the cream cheese.
  • Wrap each pepper with 1/2 slice of bacon.
  • Put in oven and bake at 400 degrees for 20-25 minutes or until bacon is crisp.
