Leftover Ham, Ham Bone, and Bean Soup ( Slow Cooker )

With simple leftover ham, a ham bone, and beans, you can create a pot of hearty and comfy cozy soup. Chunks of ham and slow-cooked beans will have you coming back for more. Add a slice of cornbread, and you have a filling meal for your family.

Ingredients

  • 1 Ham Bone, Ham Hocks, or Ham Shank with leftover meat attached
  • 3 cups Diced Ham leftover ham or smoked ham
  • 1 Onion diced
  • 1 cup Celery diced
  • 1 cup Carrots sliced
  • 1 tablespoon Minced Garlic
  • 1 (15 oz.) can Diced Tomatoes
  • 1 (10 oz.) can Diced Tomatoes with Green Chilis
  • 1 1/2 teaspoon chili powder
  • 1 pound bag Dried 15 Bean Soup Mix beans soaked over night
  • 8 cups Low Sodium Chicken Broth ( 2- 32oz. containers of broth)
  • 1 pack Bean Seasoning included with Bean Soup Mix

Instructions

  • Prepare beans the night before by rinsing beans and placing them in a large bowl. Cover beans with 6-8 cups of cold water. Place into the refrigerator overnight. The following day, drain beans and continue with the recipe.
  • Place the ham bone in the slow cooker. Add diced ham.
  • Add beans and all other ingredients except the seasoning packet. Cook on low for 7 hours.
  • About 30 minutes before the soup is done, remove the ham bone, scraping off any meat left on the bone. Be sure to check the soup carefully and remove all bones. Sometimes the large bone will cook apart into two bones and a joint bone. Then, return the meat to the cooker. Discard bones.
  • Add the seasoning package and stir.
  • Cook for 30 minutes.
  • You are now ready for a big bowl of this hearty soup.

Notes

Soak Dried Beans overnight in the refrigerator before placing them into the slow cooker.
I used a large 6-8-quart slow cooker for this recipe.
If your slow cooker won't hold all of the broth, no worries. Add enough to fill and refrigerate the rest for another use.
