Easy Smashed Potatoes

Baby potatoes roasted until crispy and then topped with bacon, cheese, sour cream, and green onions-So Delicious! An easy side dish that's perfect with chicken, pork, steak, and hamburgers. Crispy on the outside and soft on the inside.

Ingredients

  • 1.5 pounds baby potatoes 12-14 baby potatoes-red, yellow, white, yukon
  • ¼ cup oil
  • salt and pepper
  • toppings of choice sour cream, green onions, bacon, cheese

Instructions

  • Wash potatoes. Place in a large pot, and cover with water. 
  • Bring potatoes to a boil and boil until fork tender. It takes about 15-20 minutes, depending on the size of your potatoes.
  • Drain in a colander and allow to sit and dry for about 5 minutes.
  • Preheat the oven to 450 degrees.
  • Place potatoes on a lightly greased baking sheet (or two)-depending on the number of potatoes you are cooking.
  • Smash the potatoes with a potato masher, fork, or the bottom of a glass. 
  • Brush the top of the potatoes well with oil.
  • Sprinkle with salt and pepper.
  • Place into the oven and bake at 450 degrees for about 25-30 minutes or until crispy around the edges.
  • Add your favorite topping- cheese, crumbled bacon, sour cream, and green onions.

Notes

Small potatoes are the best potatoes for this recipe.
Boil the potatoes until they are fork-tender.
Add some onion powder and garlic powder to the potatoes before they go into the oven.
Toppings of choice- crumbled bacon, shredded cheese, sour cream, green onions
