Ingredients
1mediumcabbageabout 2.5 pounds
1largeonionquartered then thinly sliced
½teaspoonsalt
½teaspoonblack pepperless if desired
4tablespoonsmelted butter½ stick
½cupmayonnaise
1 (10.5 oz.) cancream of mushroom soup
1sleeveRitz Crackersor any buttery cracker
8tablespoonsmelted butter(1 stick)
1cupcheddar cheeseshredded
Instructions
Lightly spray a casserole dish with nonstick spray. Set aside.
Rough chop cabbage into bite-sized pieces and place in a 9x13 casserole dish.
Place onion on top of the cabbage and sprinkle salt and pepper. Then drizzle 1/2 stick of melted butter over the top and sides of the casserole.
To a small bowl, add 1/2 cup mayo and cream of soup. Stir and drop by spoonful over the top of the cabbage and gently spread to cover the top.
Add crushed crackers, 1 stick melted butter, and cheese to a medium bowl for the topping. Mix. Sprinkle topping on top of the casserole.
Bake uncovered at 350 degrees for 45 minutes- 1 hour.
