Cheesy Cabbage Casserole Recipe

Ingredients

  • 1 medium cabbage about 2.5 pounds
  • 1 large onion quartered then thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper less if desired
  • 4 tablespoons melted butter ½ stick
  • ½ cup mayonnaise
  • 1 (10.5 oz.) can cream of mushroom soup
  • 1 sleeve Ritz Crackers or any buttery cracker
  • 8 tablespoons melted butter (1 stick)
  • 1 cup cheddar cheese shredded

Instructions

  • Lightly spray a casserole dish with nonstick spray. Set aside.
  • Rough chop cabbage into bite-sized pieces and place in a 9x13 casserole dish.
  • Place onion on top of the cabbage and sprinkle salt and pepper. Then drizzle 1/2 stick of melted butter over the top and sides of the casserole.
  • To a small bowl, add 1/2 cup mayo and cream of soup. Stir and drop by spoonful over the top of the cabbage and gently spread to cover the top.
  • Add crushed crackers, 1 stick melted butter, and cheese to a medium bowl for the topping. Mix. Sprinkle topping on top of the casserole.
  • Bake uncovered at 350 degrees for 45 minutes- 1 hour.
