Ingredients

  • 10 Hard Boiled Eggs
  • ½ cup celery diced
  • 1 small onion diced (½ cup)
  • cup sweet pickle relish
  • ¾ cup mayonnaise
  • 2 tablespoons brown mustard Dijon, or yellow
  • salt & black pepper to taste
  • ½ teaspoon paprika

Instructions

  • Boil, peel, chop, and slightly mash eggs in a large bowl. Add all ingredients and stir well. Eat immediately or store in the refrigerator for 3-5 days. 

Notes

Great on a sandwich or as a dip.
Serve with crackers as an appetizer.
Makes a great filling for tea sandwiches for a brunch, shower, or party.
