Ingredients

  • 1 onion diced
  • 2 cloves garlic finely diced
  • 2 Tablespoons olive oil
  • 2 28 ounce cans diced tomatoes
  • 48 ounces chicken broth
  • 2 tablespoons freshly chopped basil leaves
  • 1 teaspoon each salt and pepper
  • 16 ounces heavy cream

Instructions

  • Saute onion and garlic in 2 Tablespoons olive oil.
  • Add diced tomatoes, chicken broth, basil, salt, and pepper.
  • Bring to a boil over medium heat. Reduce heat and simmer for 15 minutes.
  • At this point, add an immersion blender and blend until smooth.
  • Add heavy cream and stir well. Heat thoroughly. Serve.

Notes

If you like chunky soup, only blend with the immersion blender a little at a time until you reach the desired consistency.
