Honey Butter Skillet Corn

Ingredients

  • 1 stick butter
  • 2 16 oz. bags frozen whole kernel corn slightly thawed
  • 2 ounces cream cheese
  • 1/4 cup honey
  • 2/3 cup half and half
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Place corn in a colander and rinse under cold water until no more ice can be seen. Drain well.
  • In a large skillet over medium heat, melt butter. Add the corn stirring to coat with the butter. Cook stirring for 5 minutes.
  •  Add honey, half and half, cream cheese, salt, and pepper. Bring to a low boil, cover, and cook for 6-8 minutes, stirring every few minutes. Uncover and continue to stir for 2-3 minutes until most of the liquid has soaked into the corn. Toward the end of the cooking process, please keep a close check on your corn to ensure it is not sticking.
