Chicken Broccoli Fettuccine Alfredo

Ingredients

  • pounds chicken tenders
  • 2 tablespoons oil
  • ½ teaspoon salt and pepper
  • 16 oz. box fettuccine noodles
  • 10 oz. package broccoli fresh or frozen
  • 2 16 oz. jars alfredo sauce
  • 1 tablespoon minced garlic

Instructions

  • Bring water to a boil in a large pot. Once it comes to a boil, add a pinch of salt and the pasta. Cook according to package instructions. Add the broccoli florets in the last 3 minutes of the cooking time.
  • While the water is coming to a boil, start the chicken. Heat a large skillet with 2 tbsp oil. Cut the chicken into bite-sized pieces. Place in a large skillet and season with salt, pepper, and garlic. Cook the chicken until done over medium heat for approximately 8-10 minutes. Add the jars of alfredo sauce to the same skillet with the chicken, heat slowly over low heat, and bring to a simmer. 
  • Drain the pasta and broccoli. Add to the chicken and Alfredo sauce. Toss gently to coat the pasta. Serve with grated Parmesan, a side salad, or garlic bread.
