Instructions
Preheat oven to 350 degrees.
Mix brown sugar and cayenne. Set aside.
Line cast iron skillet or baking dish with parchment paper for easy clean-up.
Cut bacon into thirds.
Take 1 smokie and roll in a piece of bacon. Place seam side down in a baking dish or large cast-iron skillet.
Continue until all smokies are rolled and wrapped.
Sprinkle brown sugar on top of smokies.
Place in a 350-degree oven and bake for 30-35 minutes. Keep a check on your bacon during the last 5 minutes and cook until the desired doneness. I like crispy bacon, some like chewy. I let mine cook the entire 35 minutes. I flip the oven to broil and broil for 2-3 minutes for added crispness. Watch closely!!
Immediately remove cooked smokies to a paper towel-lined plate and allow to cool for at least 5 minutes. This allows the sugar to set on the smokies, making them irresistibly sticky. Enjoy
