Instructions
Mix the Peanut Butter Filling. Prepare the peanut butter mixture. In a large mixing bowl, mix butter, 2 1/2 cups powdered sugar, peanut butter, and vanilla. The mixture will become stiff.
Finish Adding the Sugar. Gradually add the rest of the powdered sugar and mix well.
Prep Your Workspace. Lay out parchment paper or wax paper for the rolled balls.
Roll the Peanut Butter Balls. Shape the peanut butter balls into about one inch balls or use a small cookie scoop to make all of the balls uniform size. I usually place these on the prepared paper. Set aside.
Melt the Chocolate. For the next step, you will need to work quickly. Melt chocolate over a double boiler or in the microwave. Follow the directions on the package.
Dip and Coat. Dip each ball into the melted chocolate. (See notes below) Place the balls on the prepared paper.
Let them Set. Allow the chocolate to dry completely before serving or storing.
Notes
Use a fork to dip the balls into the chocolate. Place the balls on top of a fork and dip them into the melted chocolate. Allow some of the chocolate to drip off before placing it on the parchment paper. You can use a toothpick to help slide the balls off the fork. Your finger will work, but it is a little messy.I usually mix the ingredients by hand and do not use a hand mixer or electric mixer. Pro Tips
Use a fork or dipping tool to make coating the balls easier.
Make sure your butter is at room temperature.
Have all of your balls rolled out BEFORE you melt your chocolate. Once you melt your chocolate, you will need to move quickly.
Line your counter with parchment paper or wax paper before you begin. You may also use a cookie sheet or two if you are limited in space.
To make these balls more uniform, use a small cookie scoop.
