Dice cooked and cooled chicken. Chop the celery and dice the onion.
In a small bowl, combine mayonnaise, lemon juice, salt, pepper, and seasoning; mix well.
Add chicken, celery, and onion; mix gently. Add more mayonnaise if needed, and to meet your liking. Serve with crackers, toasted bagels, as a sandwich, or on a bed of lettuce.
