These Easy Cucumber Cream Cheese Sandwiches are the perfect finger food sandwiches that are cool, refreshing, and light. They usually make an appearance at bridal showers, baby showers, parties, or brunches. They are super easy to make and taste fabulous! The perfect little finger food, appetizer or light lunch.
Prepare the cream cheese spread. Add the cream cheese, mayonnaise, fresh dill, chives, lemon juice, garlic powder, salt, and pepper to a medium bowl. Whip the ingredients until everything is evenly mixed and the cream cheese is soft and spreadable.
Wash and dry the cucumber. Do not peel. Slice it very thinly using a Mandoline slicer or sharp knife.
Spread a generous layer of the cream cheese mixture onto one side of each piece of bread.
Place a layer of sliced cucumbers onto a piece of bread over the cream cheese layer. Cucumbers should be placed closely and slightly overlapping.
Place the second slice of prepared bread over the cucumber layer making a sandwich.
Using a serrated knife, carefully slice the crusts off the bread, then cut the sandwich into two or four pieces or rounds. Repeat until all the sandwiches have been assembled. Serve within 1-2 hours of assembly.
