This Easy Shepherd's Pie with Instant Mashed Potatoes is the ultimate comfort food recipe. It's loaded with ground beef, vegetables, and potatoes. Combine all this with a delicious sauce, and it's sure to please your meat and potato fans.
1(.75 oz.) packagegravy mixI used mushroom. Need 1 cup of prepared gravy.
4ounce canmushroomsdrained, sliced, optional
16ounce bagfrozen mixed vegetablesthawed
salt & pepperto taste
3cupsinstant mashed potatoescooked, I used butter & herb
1cupcheddar cheeseshredded
Instructions
Preheat the oven to 350 degrees and grease a 9"x 13" baking dish with cooking spray. Set aside.
Prepare instant mashed potatoes according to package directions and set aside.
In a large skillet over medium-high heat, cook ground beef, diced onion, and garlic until the meat is browned and no longer pink. Drain excess grease.
Stir in cream of mushroom soup, prepared gravy, mushrooms (if using), mixed vegetables, salt, and pepper.
Spread the mixture into the prepared casserole dish.
Top with an even layer of mashed potatoes. Sprinkle shredded cheddar cheese over the top.
Bake for 30 minutes or until hot and bubbly. Allow to rest for 10 minutes before serving for juices to settle.
