Green Bean Casserole with Bacon and Mushrooms is a holiday classic made with bacon, cheese, onions, green beans and covered in a nice creamy sauce. It's baked in the oven until bubbly and topped with crispy onions.
1(8 ounce package)mushroomssliced and rough chopped. I used white mushrooms.
1tablespoongarlicminced
2(10.75 ounce cans)cream of mushroom soup
¼cupmilk
2cupsshredded cheesecheddar, mozzarella, pepper jack, or your favorite
½teaspoonpepper
4(14 ounce cans)cut green beansdrained
2cupsFrench Fried Onions
Instructions
Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with non-stick cooking spray.
In a large skillet, fry bacon until crispy. Remove from skillet and drain on a paper towel-lined plate. Crumble when cool and set aside.
Drain bacon grease, leaving 2 tablespoons in the skillet. Heat to medium heat, then add onions and mushrooms and cook for about 5 minutes.
Add minced garlic and cook for an additional minute.
Remove from the heat and stir in mushroom soup, milk, crumbled bacon, cheese, pepper, and green beans to the skillet. Mix well.
Pour into the prepared baking dish. Top with fried onions.
Bake uncovered for 30 minutes or until bubbly and hot.
Notes
Drain Green Beans: Drain the canned beans well before adding them to the mix. This will prevent a watery casserole.Make Ahead Casserole: Prepare this casserole, except for the onion topping and baking. Wrap the casserole in plastic wrap and refrigerate it until ready to bake. I prepared this casserole a day ahead, and it was great. When ready to bake, remove it from the refrigerator and let it rest on the counter while the oven preheats. Remove the plastic wrap, add fried onions, and bake according to directions. If your casserole has been in the refrigerator, add at least 10 more minutes to the cooking time.Allow Rest Time: Let the simple green bean casserole rest before serving so the filling can settle.I used white mushrooms. Shredded Cheese- Use your favorite-- cheddar, mozzarella, or pepper jack. I used Monterey Jack with Jalapeno Peppers.*I usually don't add salt to this dish. The bacon, fried onions, and the cream of mushroom soup usually add enough salt. If needed, you can always set the salt shaker on the table for those who might need a little more.
