Baked Pork Chops and Rice Casserole is a fork-tender dinner that is perfect for any night of the week. Pork chops seasoned, seared, and then baked in the oven with yellow rice and onion soup mix. Delicious!
Melt butter in a skillet over medium-high heat. Add pork chops and brown for 2-3 minutes on each side. Remove from the skillet.
Spread rice over the bottom of the prepared casserole dish.
Sprinkle soup mix over the rice.
Drain Mushrooms and spread evenly over the top of the rice.
Add 3 cups of hot water to the dish.
Arrange pork chops on top of the rice and water. Nestle chops down into the water a bit, covering slightly.
Cover tightly with foil and bake at 350 degrees for 45 minutes. Remove foil and bake for 10 more minutes.

Pro TipsSear for Flavor: You are not fully cooking the chops, just sealing in the juices.Use yellow rice: Yellow Rice has so much flavor and makes this dish wonderful. Instant rice or minute rice will not work for this recipe.Mushrooms: Sometimes I use fresh mushrooms in this dish and sauté them slightly in the same pan I used to brown the pork chops. Beef Broth: You can use broth in place of water if desired. Beef, Chicken, or Vegetable broth will all work nicely.
