This Hamburger Noodle Casserole is an easy recipe, cheesy, hearty, and budget-friendly. Noodles are mixed with ground beef and baked in the oven until hot and bubbly. A dish your whole family will love using simple ingredients for busy weeknights.
Prepare the Baking Dish. Preheat your oven to 375 degrees and spray a 9x13 casserole dish with nonstick cooking spray.
Cook the Pasta. Cook the elbow noodles according to package directions until al dente. Drain and set aside.
Brown the Ground Beef. In a large skillet over medium-high heat, cook the ground beef, onion, bell pepper, and garlic until the meat is fully browned and the vegetables are tender. Drain excess grease if needed.
Make the Creamy Sauce. Stir in the diced tomatoes, tomato sauce, cream of mushroom soup, salt, pepper, and onion powder. Mix until everything is fully combined and creamy.
Combine the Noodles and Meat Mixture. Add the cooked noodles to the skillet and stir until coated with the rich, creamy beef sauce.
Assemble the Casserole. Pour the hamburger noodle mixture into the prepared casserole dish and spread evenly.
Add Cheese and Bake. Top with shredded cheddar cheese and bake for 20 to 25 minutes, or until hot and bubbly, with the cheese melted and golden.

Tomato Sauce, optional- If you like the extra tomatoes, add a 15 oz. can of tomato sauce for more juice and flavor. I usually add this to my recipe. It creates more sauce for the noodles to absorb.
