Homemade Vegetable Beef and Sausage Soup is loaded with ground beef, sausage, mixed vegetables, potatoes, onions, and tomatoes. It's hearty, comforting and so warming on these cold winter days.
1(14.5 oz.) cansliced or diced potatoesor 2 medium potatoes, peeled and cubed
1quartwater
Instructions
In a large pot, brown beef, sausage, and onion. Drain.
Add the rest of the ingredients.
Bring to a boil then reduce heat and simmer for about an hour.
Serve with cornbread or crackers.
Notes
To Store: The leftover vegetable beef soup tastes great the next day. Store all leftovers in an airtight container in the refrigerator for 3-4 days.To Reheat: Reheat on the stovetop or microwave.To Freeze: This soup also freezes well.
