Homemade “Easy”  Vegetable Beef and Sausage Soup is bursting with ground beef, sausage, mixed vegetables, potatoes, onions, and tomatoes. It’s hearty, comforting, and so warm on these cold winter days.

I love a good bowl of soup, and this soup is simple, satisfying, and great for any weeknight meal. Plus, it’s made in one pot, and that’s a win-win for me!

This Vegetable Beef and Sausage Soup is so full of color and flavor. It’s “one” of my favorite wintertime foods. Other favorites include chicken and dumplings with biscuits, black bean chili recipe, and cream cheese crack chicken chili.

Ground Beef – I used one pound of ground beef.

Ground Sausage – Choose your favorite brand for this sausage and vegetable soup. I like to use spicy sausage when I can.

Onion – I use Vidalia Onions when I have them, but any onion will work fine.

Tomatoes – Diced tomatoes and crushed tomatoes are needed as a base for the soup.

Frozen Mixed Vegetables – I always have a bag of mixed veggies in my freezer (carrots, corn, green beans, peas). Feel free to use any of your favorite vegetables.

Potatoes – I sometimes use a can of sliced or diced potatoes for convenience. If I have Russets on hand, I’ll use two medium potatoes.

  • 1 pound ground beef
  • 1 pound ground sausage
  • 1 onion
  • 2 (14.5 oz.) cans diced tomatoes
  • 1 (28 oz.) can crushed tomatoes

    It must smell like Christmas when you cook this! Although I’m not a huge fam of meats, sometimes I do indulge, and this soup sounds like a good idea:)

    What a great cold weather soup! Frozen veggies are great in soup and to keep on hand in order to not have to hit the grocery store in snowy weather!

  3. There is something about the winter months that SCREAM soup and stew to me. It’s such a nice comfort food that helps us to stay warm and cozy despite the cool temperatures outside. While I don’t eat beef or pork, my husband enjoys it – so I try to make some options for him that include meat once in a while. With how easy this recipe is, I could easily make this while making myself a veggie soup at the same time!
