Simple Ingredients Cooked In One Pot

Crock Pot Cream Cheese Chicken Chili is made with simple ingredients that are probably in your pantry right now. This is truly a simple recipe to make, and plus, everything is cooked in one pot. One-pot means less mess to clean up, and that is always a win-win for me. 🙂

You can throw this recipe together in about 10 minutes tops. Just dump everything into the crockpot in the morning, turn it on, and forget about it.
Your house will smell amazing when you walk in the door after work, and the best part–dinner will be ready and waiting for you! The only thing left to do is shred the chicken.

Once the soup has finished cooking, take the chicken out of the crockpot and shred it with a fork. Return the chicken back to the Crock-Pot, and mix well.

What To Serve with Cream Cheese Chicken Chili

Serve this chili with crackers, corn chips, or cornbread.

Ingredients Needed for Cream Cheese Chicken Chili

4 Boneless Chicken Breast or 6-8 chicken tenders
1 can corn, undrained
1 can black beans, drained and rinsed
1 can Rotel tomatoes, undrained
1 can diced tomatoes
1 package dry Ranch Dressing Mix
1 package Chili Powder
2 cups chicken broth
1 8ounce package cream cheese
1 cup shredded cheese

Instructions:

Place chicken in the crockpot. Add corn, black beans, Rotel tomatoes, diced tomatoes, dry ranch mix, chili powder, and chicken broth. Stir well.
Add cream cheese to the top of the mixture. Add lid and cook on low for 6-8 hours.
After the cooking time has been completed, take out the chicken, shred with a fork, and return to the crockpot. Mix well.
Add shredded cheese to the top of each bowl.
Serve with crackers or cornbread.

Topping Ideas

Avocado slices–Anyone who knows me knows I love avocados. I could eat these babies every day for every meal. They are great on top of this chili.
Sour Cream–Go ahead and add a heaping spoonful to the top of your chili.
Tortilla Chips- Crush them and mix them in with your chili or just dip as desired.
Crackers– Saltines are my go-to crackers for just about any kind of chili.
Sliced jalapenos–Kick your chili up a notch or two with a few sliced jalapenos added to your bowl.
Cornbread– You really can’t go wrong with a piece of fresh cornbread either crumbled up in  your chili or as a side for dipping.

  • 1 can rotel tomatoes undrained

  • 1 package chili powder
  • 2 cups chcken broth
  • 1 8 oz. package cream cheese
  • 1 cup shredded cheese

  1. I make something similar to this in my crock pot and it is always so good! However, I’ve never thought to add ranch seasoning and now I feel like I’m missing something! I’m going to have to try out this recipe next time 😊

  2. Yum! This sounds so simple – I love when I can throw everything in a crockpot for a filling meal. I used my crockpot this past weekend for soup and can’t wait to start using it more in the cold months
