Instructions
Preheat oven to 400 degrees.
Prepare a large sheet pan with parchment paper or aluminum foil.
Wash and cut fresh vegetables in uniform size, about 2", and measure out frozen vegetables.
Place vegetables and sausage on the prepared sheet pan.
Drizzle olive oil over the vegetables and season well. Toss to coat and spread the vegetables in a single layer.
Transfer the baking sheet to the oven and bake for 15 minutes. Then remove it from the oven and flip the vegetables and sausage. Return it to the oven and bake for 20-25 more minutes, or until the sausage reaches an internal temperature of 165 degrees and the vegetables are tender.
