Homemade pizza night is always a YES in my home. Everyone votes on their favorite toppings, and we make several pizzas–one is never enough!
But I will say that sausage and mushroom pizza always ends up on the pizza night menu. This is a fabulous-tasting dish, and there is never any left.
This pizza can be as simple as you want it to be or as decadent as you want it to be. The toppings are left up to you and your family’s taste. However, adding rosemary to the crust kicks it up to a whole new level. It’s not overpowering, but the taste is there.

- Scramble the sausage
- Saute mushrooms, garlic, and onion until mushrooms are tender and onion is translucent.
- Make the dough.
- Roll the dough into a 12″ circle and add toppings.
- Add more toppings.
- Bake.

Mushroom Pizza
I am a huge mushroom fan, and my family knows this. So, on pizza night, it is known that mushrooms will end up on one of my pizzas. I like to saute the mushrooms first before adding them to the crust. This allows the mushrooms to cook and soften a bit before placing the crust under the broiler.
For this recipe, I used blue oyster mushrooms, which were fantastic. Please use your favorite mushrooms, and I’m sure it will be just as tasty.
Italian Sausage on Pizza
Italian sausage is terrific on pizza. It is my favorite pizza topping because it is seasoned so well. Italian sausage adds so much flavor and goodness to every bite.
Suppose you don’t have or like Italian sausage—no worries! Pork sausage will work just fine for pizza. Cook the sausage, crumble it, and add it to your pizza as desired.
Thin Crust Cast Iron Skillet Pizza
Thin crust is my all-time favorite. This crust is perfect for a Cast-Iron Pizza. The crust is cooked for several minutes in the skillet before adding toppings. It is then finished in the oven until the crust is brown and everything becomes one. This crust works perfectly every time, is crispy and crunchy, and holds the toppings well.

Sausage and Mushroom (Cast Iron) Pizza
Ingredients
- ½ pound Italian Sausage bulk
- 2 tablespoons butter
- ½ pound mushrooms, sliced I used blue oyster mushrooms for this recipe but any mushroom will work fine.
- 1 onion diced
- 1 tablespoon minced garlic
- ¾ cup warm water
- 2 teaspoons active dry yeast
- 1 tablespoon + 1 teaspoon sugar, divided
- 2 cups all purpose flour
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 2 tablespoons olive oil, divided
- 4-5 tablespoons pizza sauce
- 1 cup baby spinach (optional) rough chopped
- 1 small can black olives, optional sliced
- 2 cups shredded mozzarella cheese
Instructions
- In a 12" cast-iron skillet over medium heat, cook and scramble sausage until no longer pink. Remove to a bowl. Set aside.
- Add butter to the cast-iron skillet over medium heat. Saute mushrooms, garlic, and onion until mushrooms are tender and onion is translucent. Remove from skillet. Set aside.
- Preheat the oven to 450 degrees. To a bowl, add warm water. Add 1 tablespoon of sugar and yeast. Stir it. Let it sit 5 minutes until foamy.
- Add flour, rosemary, 1 teaspoon sugar, salt, and 1 1/2 tablespoons of oil to the yeast. Stir to combine to form a dough. Turn onto a lightly floured surface and knead 8-10 times-adding more flour to the dough if it becomes too sticky. Place the dough back into the bowl and let the dough rest for about 10 minutes while you prepare the rest of the toppings. (grate the cheese, chop the spinach)
- Roll the dough into a 12" circle.
- Brush the bottom of the 12-in. cast-iron skillet with the remaining oil—transfer dough to the skillet and bake for 5 minutes. Remove the skillet from the oven. Spread crust with pizza sauce; top with mushroom mixture, sausage, black olives, spinach, and cheese.
- Place skillet on middle rack in the oven. Bake for about 15-20 minutes or until the crust looks crispy and golden brown.
