Chili Mac and Cheese

Chili Mac and Cheese is definitely a comfort food you will want to serve your family this winter. It is truly warming, and it’s a super filling dinner option. It most definitely can be made fast and on your table as a weeknight meal. You can enjoy the best of both worlds–spicy chili and mac and cheese — both delicious and in one pot.

I usually have all of these ingredients on hand for this dish. Tomatoes, kidney beans, tomato sauce, onion, hamburger, noodles seasonings, and cheese. Basic pantry staples, and it’s pretty easy on your budget — a great way to stretch your dollars at the end of the month.

Have company coming over to watch the ball game? Double the recipe. Are you having a fire pit party? Serve a big bowl of Chili Mac and Cheese to your guest. They might stay all night!

Ingredients Needed for Chili Mac and Cheese

hamburger meat
 onion
 Elbow Macaroni Noodles-uncooked
 diced tomatoes-undrained
 tomato sauce
 kidney beans, drained
chili seasoning 
 shredded cheddar cheese

How to make Chili Mac & Cheese

Scramble hamburger and onion together in a large *oven-safe skillet. Cook until the hamburger is no longer pink. Drain.
While the hamburger is cooking, boil the noodles in another pot according to the package directions. Set aside.
Add tomatoes, tomato sauce, kidney beans, and chili seasoning to the hamburger mixture. Stir well.
Add drained noodles. Stir well.
Place in oven at 350 degrees for 30 minutes or until bubbly.
Top with 2 cups of cheese. Return to oven for 10 minutes or until cheese has melted.
Remove from the oven. Serve over corn chips. Top with sour cream and jalapenos –if desired.
**If you don’t have an oven-safe skillet, pour your chili mixture into a casserole dish and place into the oven.

What to Serve with Chili Mac & Cheese

A side salad is always a good choice to serve with this dish. Some other good options might include– Corn on the Cob,  Southern Fried Green Beans,  Zucchini Fries, Fried Green Tomatoes, Crispy Fried Okra, or Pan Roasted Vegetables. You really can’t go wrong with any of these sides.

Top with sour cream and jalapenos and serve over corn chips. You won’t be disappointed.

  • 2 pounds hamburger meat

  1. This looks so delicious. I actually fixed something similar last week. I’m going to try some of your ingredients too next time.

  2. Growing up, my dad would cook up some Velveeta boxed mac and cheese and mix in a can of chili with it once it’s all cooked. I remember it being SO good, so I am sure being homemade it would be even better! Thank you for sharing!
