These oven-baked pork chops are one of my favorite recipes and are often on the dinner menu. They are easy, perfect for busy weeknights, and always flavorful.
With just a few simple ingredients from your pantry, you can have dinner ready and on the table in no time. This savory and sweet dish with a bit of stickiness is perfect for any night of the week.
Pork chops are always welcome in our home. I grill them most of the time, but some nights, I just don’t feel like firing up the grill. Unlike my Creamy Baked Pork Chops, these only need a coating of dry rub before they go into the oven.

How To Cook Bone-In Pork Chops in the Oven
This dish is easy to prepare, and there is very little prep work. The oven does all of the work for you, and clean-up is a snap. For detailed instructions, see the recipe card below.
- Pat dry Pork Chops with a paper towel.
- In a bowl, mix brown sugar and seasonings.
- Rub seasonings over pork chops on both sides, pressing into the meat.
- Place in a foil-lined and sprayed baking dish.
- Bake at 350 degrees for 35-40 minutes.
- Once pork chops have cooked, turn the oven to broil.
- Broil for 3-4 minutes to caramelize brown sugar. The last few minutes in the oven give the chops a caramelized topping with incredible flavor. With just the right amount of brown sugar and seasonings, you will be licking your fingers and asking for more. Easy and full of flavor.
The Best Pork Chops for this Recipe
Several cuts of pork chops will work for this recipe. I usually find bone-in center-cut pork loin chops about one and a half inches thick on sale at the grocery store and use them. Thin, thick-cut, or even boneless pork chops will work for this easy dinner recipe. Of course, the cooking time may vary according to the thickness of the meat, so adjust your cooking time accordingly.

Do You Bake Pork Chops Covered or Uncovered?
Pork chops are baked in an uncovered baking dish. Depending on the number and size of your pork chops, an 8 ” x 11″ baking dish or a 13″ x 9″ baking dish will work nicely. I sometimes use a cast iron pan, and this works well.
How Do You Know When Pork Chops Are Done?
Pork chops are done when their internal temperature reaches 145 degrees. The cooking time may vary depending on how thick the chops are cut. Let the meat rest for a few minutes before slicing.
Recipe Tips
- Pat dry the pork chops before adding the seasonings. This step is necessary so your seasonings will stick.
- Line a baking sheet or baking dish with aluminum foil. This will make the clean-up super easy. I am all about easy clean-up.
- Use bone-in pork chops for this recipe. In my opinion, bone-in meats have more flavor than boneless.
- Season both sides of the pork chops. Slightly press the seasoning into the meat. Go ahead and give it a good rub.
- Don’t overcook. No one likes a dry pork chop.
- Allow the pork to rest for at least 5 minutes before slicing.
- Finish this recipe under the broiler for caramelization.
- Drizzle any leftover juices in the pan over the top of pork chops. Finger-licking deliciousness!

How To Store Leftover Pork Chops
Cool pork chops to room temperature. Store any leftovers in an airtight container in the refrigerator for up to 3 days. When ready to eat again, reheat in the oven for a few minutes.

- 4-5 Bone-In Pork Chops
- 4 Tablespoons Brown Sugar
- 1/2 teaspoon each Lemon Pepper, Garlic Powder, Salt, Pepper

Always had a problem with dry chops when I oven baked them, until now. Great juicy chops. I added onion powder in place of the lemon pepper and used a commercial rub instead of the brown sugar. Excellent!!!

Hi Anna, You could certainly add some honey if you so desire. I would add the honey to the pork chops and then add the dry mix on top. I’m sure it would be tasty.
