This is one of the easiest casseroles to make and bake. Only simple ingredients are needed for a fantastic taste. This potato casserole will feed a crowd. 

We like potato dishes in our home. Some of our favorites are cheesy hash brown casserole, creamy au gratin potatoes, oven baked potato wedges, skillet fried potatoes and onions.

If you like, split the recipe in half, cook some for now and freeze the rest for later. Just pull the pan out of the freezer in the morning, let them thaw in the refrigerator during the day, and bake. You may need to add a few extra minutes to the cooking time if the potatoes are still frozen in the middle. 

This cheesy hash brown casserole is perfect for the holidays. It is always requested and seems to disappear fast. It comes together quickly and is the perfect side dish for Christmas, Thanksgiving, and Easter. Who can turn down a great-tasting Cheesy Potato Casserole? Not me!

Ingredients Needed

Hash Brown Potatoes: Choose your favorite brand. These are easy to find in the freezer section at your local grocery store.

Bacon-I like to use the thick sliced bacon but use what you want and have on hand.

Cream of Mushroom Soup: You can easily swap out for cream of chicken if you have that on hand.

Sour Cream: Adds creaminess to this casserole.

Cheddar Cheese: Shred your cheese or use the pre-shredded cheese if desired. Try different blends or cheeses such as Colby Jack, Pepper Jack, or even a Mexican Blend.

Ranch Seasoning Mix: The dry mix is all that’s needed for this recipe.

How to Make This Casserole

  1. Spray a 9″x 13″ baking dish with nonstick spray.
  2. Preheat the oven to 400 degrees.
  3. In a large bowl, stir soup, sour cream, ranch seasoning, bacon, cheese, and potatoes. Stir to mix well and coat potatoes. Pour into the prepared baking dish.
  4. Bake uncovered for 45-50 minutes.
  5. Allow the casserole to rest for 5 minutes before serving.

Ingredients
  

  • 2 10.75 cans Cream of Mushroom Soup
  • 1 16 oz. Sour Cream
  • 1 1 oz. package Ranch Seasoning Mix, dry
  • 6 slices Bacon, cooked and crumbled
  • 2 cups Cheddar Cheese, shredded
  • 1 32 oz. package Hash Brown Potatoes, diced

Instructions
 

  • Spray a 9"x 13" baking dish with nonstick spray.
  • Preheat the oven to 400 degrees.
  • In a large bowl, stir soup, sour cream, ranch seasoning, bacon, cheese, and potatoes. Stir to mix well and coat potatoes. Pour into the prepared baking dish.
  • Bake uncovered for 45-50 minutes.

Notes

If desired, you can prepare the casserole to bake later. Mix, cover, and store in the refrigerator until ready to bake. Bake as directed. To Freeze: Mix the casserole, cover, and freeze. To bake after freezing: thaw completely in the refrigerator and bake as directed above. You may need to add a few extra minutes to the cooking time.
