Creamy Mushroom Rice

Easy Creamy Mushroom Rice is a one-pot simple yet flavorful side dish that takes rice to a whole new level. This is the perfect compliment for just about every main dish -chicken, beef, fish, and pork.

You will only need some basic ingredients to have an amazing side dish- mushrooms, butter, rice, cream of mushroom soup, and chicken broth. That’s it! No more boring rice ever again on your dinner table; take rice to the next level.

I especially like this easy rice recipe with my blackened salmon and oven-baked pork chops.

The ingredient list is short, but this easy mushroom rice recipe has many flavors. You just can’t beat browned mushrooms in butter.

  • Butter: Everything is better with a little butter. Right? Two tablespoons of butter are needed for this tasty rice dish.
  • Mushrooms: I like to use fresh mushrooms for this recipe (if I have them) in the refrigerator. If not, the canned mushrooms will work in a pinch. 
  • Condensed Cream of Mushroom Soup: Yes, so much flavor in a can. This adds creaminess to the rice and makes it delicious.
  • Chicken Broth: I like to use chicken broth instead of water whenever I cook rice. It just adds the right amount of flavor.
  • Instant Rice: I used instant white rice, but feel free to use your favorite type of rice. Long grain rice, short-grain rice, brown rice, or wild rice would all work for this recipe. Just remember to pay attention to the liquid needed for the rice you use. Some types require more liquid and time to cook. You will need to adjust the cooking time accordingly if you use a different rice. I always have instant rice on hand in my pantry. It’s super fast and can be used in so many recipes to help make dinner easier.

The next time you are looking for a family favorite and family-pleasing dish, be sure to try this easy side dish for your next meal.

Saute mushrooms in butter until soft—about 5 minutes. 

Add soup and broth to the mushrooms.

Heat the soup and broth in a saucepan over medium to medium low heat and bring to a boil. 

Stir in the rice. Cover and remove from heat. 

Let stand for 5 minutes—fluff with a fork. Add salt and pepper as desired.

What Makes this Mushroom Rice so Flavorful?

To take this rice to a whole new level, you will need to substitute the water and use soup and broth. The cream of mushroom soup and the chicken broth adds tons of flavor. In addition, the sauteed mushrooms kick it up to make one flavorful dish you will want to add to your monthly rotation. 

This recipe is full of mushrooms and is wonderful for mushroom lovers. White button mushrooms and Baby Bella mushrooms add great flavor, making this one of my favorite recipes. But, of course, the type of mushrooms you choose is up to you and your taste.

Other Add-Ins:

  • A great addition might be sliced link sausages.
  • A diced yellow onion will add flavor.
  • Green onions sprinkled over the top if desired.

What to Serve with Creamy Mushroom Rice

Mushroom rice is such an amazing and versatile side dish. You could serve just about anything with it, and it would be amazing. Some of my favorites are Sticky Chicken, fried pork chops, Classic Meatloaf, and Blackened Salmon.

If you want to turn this dish into a main meal, add some sausage, ground (cooked) hamburger, or sliced sausage links to the recipe.

Expert Tips and Variations

  • I like to use fresh mushrooms for this dish. If you don’t have any in the refrigerator, use a can of sliced mushrooms. 
  • Instant rice makes this dish fast and easy.
  • Feel free to use brown rice or long grain rice instead of white rice. Cook according to package directions.
  • If you are using a different rice, pay attention to the liquid and the time required. Some rice may need more liquid and a longer time to cook than others, depending on your rice type.
  • If you don’t have Condensed Cream of Mushroom Soup, you can most definitely swap it out with cream of chicken or cream of celery soup.
  • Fluff rice with a fork before serving and give a good stir to ensure the mushrooms are evenly mixed. 
  • Feel free to swap out the chicken broth with beef broth, vegetable stock, or water if so desired.
  • Saute a diced yellow onion and add to the rice.

How to Store Leftover Creamy Mushroom Rice 

Got leftovers? Any leftover mushroom rice can be stored in an airtight container in the refrigerator. Perfect for another night or great to grab for your lunchbox.

To reheat: Place into the microwave for about a minute or two and enjoy again.

I like a lot of mushroom recipes. One of my favorites is sauteed mushrooms. This is a super simple side dish that cooks in about 20 minutes. This recipe only requires 4 ingredients from start to finish.

Once the liquid comes to a boil, add the rice, cover, and remove from the heat. Allow the rice to absorb the liquid- about 5 minutes—fluff with a fork. 

I usually try to eat all of the leftover rice within 3-4 days. Usually, it’s gone by the next day.

I like to search the produce section at my local grocery store for the freshest mushrooms. I usually buy Baby Bella mushrooms, but any kind would work. Sometimes I buy them whole and slice them myself. Other times I buy the presliced ones.
