Baked cabbage steaks are a simple dish that requires only a few ingredients, making them an easy weeknight side dish.

  • Cabbage: I prefer using green cabbage for this recipe. I start with a whole head of cabbage and slice it into 3/4- to 1-inch slices, leaving the cabbage intact.
  • Oil: Used to crisp the edges and to keep the cabbage from drying out. I use vegetable oil, but olive oil would work as well.
  • Seasonings: Simple without being overpowering.
  • Butter: Melts over the hot cabbage, allowing it to melt between the layers for a rich touch.

Step 1: Preheat your oven. Line the baking sheet with parchment paper or foil that has been sprayed with nonstick spray.

Step 2: Prep the Cabbage. Rinse the head of cabbage, then remove the core and some of the outer edges or leaves. Slice into 3/4″ to 1″ slices, leaving it intact.

Step 3: Season. Place cabbage on the prepared baking sheet. Drizzle with oil, salt, pepper, and garlic powder. Brush to cover the cabbage evenly.

Step 4: Bake. Place cabbage steaks in the oven and bake at 400°F for 40 minutes, or until the cabbage is tender and the edges are slightly crispy. The cooking times will depend on how thick you cut your slices. Add butter to the top of the hot cabbage.
