Roasted Cabbage Steaks
Roasted Cabbage Steaks are crispy on the edges, tender in the middle, and bursting with buttery flavor. It’s the easiest way to turn an inexpensive vegetable into something you’ll crave again and again.

Cabbage Steaks are quick, easy, and very satisfying on their own or as a vegetarian side dish. They’re roasted in the oven until soft and tender with slightly crispy and charred edges.
I love cabbage in just about any way you prepare it, such as my Asian Ramen Noodle Coleslaw, roasted, boiled, and even in Creamy Cabbage Casserole. I grow it in my garden every summer. Therefore, this recipe appears on the menu, especially during the summer months.

🛒 Ingredients Needed for Roasted Cabbage Steaks
Baked cabbage steaks are a simple dish that requires only a few ingredients, making them an easy weeknight side dish.

- Cabbage: I prefer using green cabbage for this recipe. I start with a whole head of cabbage and slice it into 3/4- to 1-inch slices, leaving the cabbage intact.
- Oil: Used to crisp the edges and to keep the cabbage from drying out. I use vegetable oil, but olive oil would work as well.
- Seasonings: Simple without being overpowering.
- Butter: Melts over the hot cabbage, allowing it to melt between the layers for a rich touch.
🔀 Recipe Variations
- Spicy: Add a sprinkle of cayenne pepper or crushed red pepper flakes to the top of each slice before baking.
- Cheesy: Sprinkle Parmesan cheese on top of each slice during the last 5 minutes of baking.
- Bacon: Add some crumbled bacon over the top for flavor.
- Sweet: Drizzle with honey and sprinkle with a few toasted pecans.

💭 Pro Tips
- Line the baking sheet with parchment paper to prevent the cabbage slices from sticking.
- Completely cover each slice with oil and seasonings so each bite is flavorful.
- If the size of your cabbage is large, you may need two baking sheets or save the other half for another time.
🧺 Storage Tips
Refrigerator: Store any leftovers in an airtight container in the fridge for up to 3 days.
Reheat: Place the leftover cabbage in an oven-safe dish and heat at 400°F for 10-15 minutes, or until hot. You can also place leftovers on a microwave-safe dish and reheat for a few seconds in the microwave.

❔ Recipe FAQs
Yes, roast them earlier in the day and reheat them before serving.
Cut thick slices and handle gently. Use a wide spatula when adding them to the baking sheet and removing them to keep the outer leaves from falling off.
Check several times throughout the cooking process. The cabbage is done when it is fork-tender, soft, and the edges are a bit crispy. Remove them from the oven a little earlier if you don’t like crispy edges.
