  • Cooked shredded chicken—For this recipe, cook and shred chicken. If you are short on time, grab a rotisserie chicken. If you have leftover chicken, use that. This is all about making dinner easy and fast meal prep.
  • Sour Cream– Adds creaminess and richness to the dish.
  • Shredded Cheddar Cheese– Cheese makes the dish so good. Feel free to use your favorite variety. Some good choices or swaps would be mozzarella cheese or swiss cheese.
  • Dry ranch seasoning– Use the ranch in the package. The same kind you would use to make a dip. This provides a classic ranch flavor that pairs perfectly with chicken.
  • Cream of Chicken Soup – This adds so much flavor and creaminess to the top of the crescent rolls.
  • Milk— I used whole milk, but a reduced fat would also work. This helps to thin the sauce a bit.
  • Refrigerated Crescent Rolls- The flaky crescent rolls will serve as a delicious wrapping for your chicken filling. I used two cans of crescent dough (rolls).

  • Prep ingredients- Shred chicken and combine ingredients.
  • Separate crescent rolls into 16 triangles. Fill the large part of the crescent triangles with the chicken mixture. Be generous.
  • Roll the crescent rolls up and place them in the bottom of the prepared dish.
  • In a small bowl, mix milk and soup. Pour soup mixture over crescent rolls. 
  • Top with remaining cheddar cheese.
  • Bake for 30-35 minutes or until bubbly.

How to Store and Reheat Leftovers

Storing leftovers and then reheating them properly will ensure they maintain their delicious taste and texture. Transfer any remaining roll-ups to an airtight container or wrap them tightly in aluminum foil or plastic wrap. Store them in the refrigerator for up to 3-4 days. To Reheat: Place the chicken roll-ups in a baking dish and reheat in the oven until hot. OR place them in a microwave-safe shallow dish, cover them with a paper towel, and heat until warm throughout.

Ideas for Extra Chicken Mixture

Cook once and eat twice. This recipe is one of our favorite meals and is in the front of my recipe box. 

Tip ** I had about a cup of filling left after generously filling the crescent rolls. I had 3 options:

This mixture makes enough for 16 crescent rolls with leftover chicken mixture. 

  1. Make 8 more crescent chicken pockets. Use 3 cans instead of 2. More to enjoy.
  2. Use the leftover chicken mixture for chicken salad. Yep, this makes the best base for chicken salad. Add some mayo, onions, pickles, and whatever else you like. Serve it with crackers as an appetizer or make a sandwich. I mixed everything well and refrigerated it. It’s the best chicken salad EVER!
  3. Add the mixture to the top of a baked potato. Add more cheese, crumbled bacon, and some chives.

Ingredients
  

  • 2 cups chicken cooked and shredded
  • 16 oz. sour cream
  • 2 cups cheddar cheese, shredded or your favorite
  • 1 package (1oz.) dry ranch seasoning
  • 1 (10.75) can cream of chicken soup
  • ½ cup milk
  • 2 (8oz.) cans crescent rolls refrigerated (8 count)

Instructions
 

  • Preheat the oven to 350ºF. Lightly spray a 9×13-inch dish with cooking spray.
  • Combine sour cream and ranch seasoning. Stir well. Set aside.
  • Combine chopped chicken, sour cream mixture, 1 cup of cheddar cheese. Mix well.
  • Separate crescent rolls into 16 triangles. Top the large part of the crescent triangles with the chicken mixture. Be generous.
  • Roll the crescent rolls up and place them in the bottom of the prepared dish.
  • Mix milk and soup. Pour soup mixture over crescent rolls. Top with remaining cheddar cheese.
  • Place the baking dish into the oven and bake 30-35 minutes or until bubbly.

Notes

Tip ** I had about a cup of filling left over after generously filling the crescent rolls. I had 2 options:
  1. Make more crescent rolls.
  2. Make chicken salad. I added a little more chicken (I had cooked earlier for this dish and didn’t need it), diced onion, chopped pickles, and a spoonful of mayo. I mixed everything well and refrigerated it. Best chicken salad–EVER!
