Here in the south, we expect baked beans, corn on the cob, pickled onions, and a big bowl of coleslaw to be served at every barbecue or cookout. It’s a classic side dish that is so simple to make and goes great with just about everything it sits next to on your plate.
Coleslaw is not only great with pork sandwiches, bbq ribs, or buffalo chicken tenders, but it’s also fabulous with grilled salmon, fried fish, Chicken Fajitas, and southern-style salmon patties.
My husband is a coleslaw snob. He won’t eat just anyone’s slaw. He is picky about the look and the taste. But, he loves my slaw. Yay for me! And with just a few simple ingredients, you too can have the best creamy coleslaw for your family and friends.

How To Make Simple Creamy Coleslaw
Stir all ingredients together.
Cover with plastic wrap and refrigerate until ready to serve.
This will feed a crowd. Feel free to cut this recipe in half if only serving a few people.
I like to make this amount and eat it for lunch and dinner most nights. This slaw will keep for 3-4 days well in the refrigerator. It stays crunchy even after several days in the refrigerator.
Perfect for a bbq, family reunion, or cookouts.
Tips for Making The Best Creamy Coleslaw
Use good ingredients. Feel free to buy a whole cabbage and a bag of carrots if so desired and slice them up. But, I prefer to keep it simple and buy the prepackaged coleslaw mix. It already has cabbage and carrots chopped and ready to go.
I like to use dill pickles in my coleslaw. If you are a sweet pickle eater– go for it! In my opinion, sweet pickles will change the taste a little, but the slaw will still be delicious.
Jalapeno Peppers are optional for this recipe. My family likes the spiciness, so I usually add them to my slaw. If you are making this for a crowd and are unsure about the heat, leave them out to be on the safe side.
Start with 1 1/2 cups of mayonnaise and add as desired. I usually add the whole 2 cups to make it extra creamy, but some people may prefer the slaw with slightly less.
How to Store Leftover Coleslaw
Store leftover slaw in the refrigerator. Store in an airtight container for up to 3-4 days. This slaw is great served on burgers, hot dogs, and pulled pork sandwiches. To me— it’s better the next day. Just my opinion.
Can I Freeze Coleslaw
No. The mayonnaise used in this coleslaw makes it unsuitable for the freezer. But, this recipe is so fast to prepare that you can whip this up anytime you desire in only a few minutes.

- 2 14 oz. packages Classic Coleslaw Mix
- 1 onion, diced
- ½ cup dill pickles, chopped
- 1 jalapeno pepper, finely diced and seeds removed optional

What a great recipe. When I was growing up my parents would by chicken from the fast food places and they knew that coleslaw was my jam so they would get me a larger side just for me. I was never really a fan of the fried chicken.
I’m excited to make this recipe. The addition of dill pickles and jalapenos and all that creaminess has my mouth watering!
