Strawberry Rolls with Cream Cheese Glaze

Strawberry Rolls are loaded with sweet strawberries and topped with a cream cheese glaze. Super soft, fluffy, and full of strawberry flavor. Perfect for breakfast, brunch, or dessert.

Recipe origin

The recipe was developed after I bought 2 whole flats of strawberries for a school fundraiser. Yep, 16-quart containers of fresh strawberries. A lot of berries that will undoubtedly be put to good use.

These strawberries will be turned into jam, toppings for pancakes, filling for a cobbler, strawberry pie filling, frozen for wintertime desserts, a strawberry dessert bowl, and a cheesecake.

Also, I am a huge fan of the Little Debbie Strawberry Rolls, and I wanted to make something like them. Honestly, these Homemade Strawberry Rolls are better!

These rolls are soft, fluffy, and full of strawberry sweetness. If you love cinnamon rolls, you will love these strawberry rolls with cream cheese glaze. This recipe is super easy to make, and everyone will love them.

  • All of the ingredients are straightforward and can be found easily in grocery stores. When strawberries are in season, this is the best recipe to make and use fresh berries. If you want Strawberry Rolls during the winter, use frozen berries- just thaw them first.

Ingredients Needed for Strawberry Rolls with Cream Cheese Glaze

Dough: Flour, milk, sugar, yeast, butter, eggs, vanilla, and salt.

Filling: strawberries, sugar, cornstarch

Glaze: cream cheese, vanilla, powdered sugar, milk

I use Active Dry Yeast. Make sure your yeast has a good date. You don’t want to use expired yeast. Your dough will not rise properly.

How to Make Strawberry Rolls

Make the dough:

  1. Warm the milk in the microwave for 1 minute.
  2. Pour into a stand mixing bowl, add yeast and sugar to the milk.
  3. Stir slightly.
  4. Let sit for 10 minutes until yeast dissolves.
  5. After 10 minutes, turn the mixer to low whisk in butter, eggs, salt, and vanilla.
  6. Change to a dough hook, then add flour. Mix until a soft dough forms-about 5 minutes.

Rise: Place the dough in a lightly oiled bowl. Cover with plastic wrap and let rise until double in size- about an hour. 

Steps for Strawberry Rolls

Roll Out and Spread Filling: Turn the dough onto a lightly floured surface and roll out into a 12″ x 18″ (or somewhat close) rectangle. Spread the strawberry filling onto the dough. Tightly roll the dough up to form a log. Pinch the end seams together to seal. This step is messy but totally worth it. *Tip* use a serrated knife to slice the dough. The filling will come out a little. Use a small spatula to help pick up from the cutting board and move to the buttered dish. Turn filling side up. Slice into 10-12 rolls. Arrange in prepared baking dish.

Rise Again: Cover with plastic wrap and let rise for at least an hour or two.

Bake and Glaze:

  1. Bake at 350 degrees for about 30 minutes or until golden brown.
  2. Make the Glaze.
  3. Allow the rolls to cool for about 10 minutes.
  4. Drizzle with Glaze.

Expert Tips for Making the Best Strawberry Rolls with a Cream Cheese Glaze

The dough will be a little sticky. Make sure you flour the surface and your hands well.

Leave a 1″ border around the edge of the dough when adding the filling. This will help keep it from leaking out so much.

Make sure your milk is warm, not hot. Hot milk will kill the yeast.

Find a warm place for your dough to rise.

Check the expiration date on the yeast package. 

Wipe your knife off between slices. This will help to keep the rolls a little neater.

Use a small spatula to help transfer the rolls from the cutting board to the baking dish.

Ingredients
  

Dough:

  • 4 cups all purpose flour
  • 1 cup milk
  • 3/4 cup sugar
  • 1 1/4 oz. package active dry yeast
  • 1/2 cup butter softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Filling:

  • 2 cups strawberries chopped
  • 1/4 cups sugar
  • 1 tablespoon corn starch

Glaze:

  • 4 oz. Cream Cheese softened
  • 1 teaspoon vanilla
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk more if needed to thin

  • Place strawberries in a small saucepan and cook on low for 2 minutes, mashing slightly to release some juice. Add sugar and corn starch. Stir well until all is mixed and sugar melts—Cook for 2 minutes. Remove from heat and chill until ready to use.

Glaze:

  • In a stand mixer, add cream cheese and whip until smooth. Mix in all other ingredients until well blended. Add more milk if needed to thin the glaze to pour over the top of the rolls. You are looking for a thick but pourable glaze.
