  • Use full-fat sour cream.
  • Don’t overmix the batter. 
  • Do not overbake the cake. Start checking the cake for doneness at the 45-minute mark. Baking times will vary depending on your oven and baking pan size. 
  • Remove the cake from the pan after 10-15 minutes, or condensation will begin to form on the outside of the cake.
