Every year my family gets to choose the birthday cake of their choice, and I make it for them. We have had many cakes over the years, but this ice cream cake has been a favorite and has been served on several birthdays in the past.

Having a summer birthday usually calls for a dessert that is cool and refreshing, and this Ice Cream Sandwich Cake fits perfectly. Ingredients Needed for the Best Ice Cream Sandwich Dessert

*Ice Cream Sandwiches

*Confectioners Sugar

*Cream Cheese

*Cool Whip

*Chocolate Syrup

The toppings are endless. I like to keep it simple with just chocolate syrup but feel free to change it up with caramel syrup, nuts, or crushed cookies. Really, just top it with all of your favorite things. You can’t go wrong!

How To Make an Ice Cream Cake

Cream together cream cheese and confectioners sugar. Fold in Cool Whip and set aside.

Layer 1– Layer the bottom of a casserole dish with 6 ice cream sandwiches. Cut to fit if needed.

Layer 2– Spread the cream cheese mixture over the top of the ice cream sandwiches.

Layer 3– Place the rest of the ice cream sandwiches on top of the cream cheese mixture. Spread Cool Whip over the top. Drizzle with chocolate syrup. Place into the freezer until ready to serve.

How to Store the Ice Cream Cake

Wrap the cake tightly with plastic wrap and place into the freezer. This cake will keep for several weeks– if it lasts that long.

• 12 Ice Cream Sandwiches
• 1 cup confectioners sugar
• 8 ounces cream cheese, softened
• 16 ounces Cool Whip
• Chocolate Syrup

Instructions

 

• Cream together cream cheese and confectioners sugar. Fold in 8 ounces Cool Whip. Set aside.
• Layer 1–Line the bottom of a 8×11 casserole dish with 6 ice cream sandwiches. You may need to cut the last sandwich to fit.
• Layer 2–Spread the cream cheese mixture over the top of the ice cream sandwiches.
• Layer 3–Place the rest of the ice cream sandwiches on top of the cream cheese mixture. Spread Cool Whip over top. Drizzle Chocolate syrup over the Cool Whip. Place into the freezer until ready to serve.
