This Cheesy Doritos Chicken Casserole is easy to make, and the cleanup is even easier. If you love chicken tacos, you’ll love this easy dinner recipe. It’s hearty, filling, and a family-pleasing dinner. This is a wonderful dish for Taco Tuesdays and gives a little twist to taco night.

Casseroles are the ultimate comfort food to me. A few of my favorite casseroles are Ritz Cracker Chicken Casserole, Chili Cornbread Casserole, and Chicken and Yellow Rice Casserole. They are all wonderful, family-friendly, easy to make, and satisfying. This is a family favorite recipe and it’s on our monthly rotation.

Nacho Cheese Doritos– This recipe calls for a whole bag of Doritos. Feel free to cut back on the amount if so desired. This sounds like a lot, but this recipe makes a large dish and will feed a hungry family. 

Chicken– This recipe is perfect for using any leftover chicken, rotisserie chicken, boiled chicken breasts, or any cooked and shredded chicken will work for this recipe.

Cheese– I used cheddar for this recipe, but pepper jack, Colby, or Monterey Jack would also be good choices.

Rotel Tomatoes (diced tomatoes with green chilies)- Tomatoes add spiciness to the dish and flavor it well.

Sour Cream– I use full-fat sour cream for flavor and texture.

Condensed Cream of Chicken Soup– You can substitute cream of mushroom soup if so desired.

Corn– I used a can of whole kernel corn.

Black Beans– I like black beans with my tacos. If you are not a fan, leave them out. The black beans make this a fabulous Mexican chicken casserole.

Seasoning– A taco pack is all the seasoning you will need.

Do I Need To Use All Of The Doritos For This Recipe?

No. You do not have to use all of the Doritos for this recipe. Cover the bottom of the dish, and use as many as you like for the topping. Save the remaining Doritos for another use.

How to Make Chicken Taco Casserole

Preheat the oven and spray a casserole with nonstick spray.

  1. Crush the chips and place half of them into the bottom of the prepared casserole dish.
  2. In a large bowl, combine sour cream, soup, tomatoes, corn, black beans, taco seasoning, and 1 cup of cheese.
  3. Add the shredded chicken.
  4. Stir until combined.
  5. Spread the mixture over the top of the chips in the baking dish.
  6. Top with remaining cheese.
  7. Add remaining chips.
  8. Bake uncovered for 25-30 minutes or until hot throughout.

Easy Chicken Taco Casserole Tips and Variations

  • This easy chicken taco casserole is so easy to make for any night of the week. All of the items are easy to find at the grocery store, and this is a mix-and-bake dish. 
  • Buy a rotisserie chicken to speed up the prep work. You can dice or shred the chicken. I used shredded chicken.
  • I cook a family pack of chicken tenders, shred the chicken, measure it out into bags, and freeze it. Having cooked chicken on hand is a huge time saver for getting dinner on the table. 
  • Experiment with different cheeses. I used cheddar, but pepper jack would be great.
  • If you are not a fan of Doritos, you can use regular tortilla chips.
  • Swap up the Nacho Cheese Doritos flavor. Instead, use Cool Ranch Doritos for a twist.
  • The diced tomatoes add a little bit of spiciness to this recipe. If you like extra spicy, try the “hot” Rotel tomatoes.
  • Add some diced jalapenos if desired.

What to Serve with Creamy Chicken Casserole

This is a complete meal on its own, but a green salad or yellow rice would go great with this dish.

How to Store Cheesy Chicken Dorito Casserole

Store any leftovers in an airtight container in the refrigerator for 3-4 days. 

To Reheat:

Leftovers are fabulous the next day. Reheat leftovers in the oven at 350 degrees or heat in the microwave until warm. *If heated in the microwave, the chips will become a little soggy. It’s still good, but not as crunchy.

  • 3 cups chicken cooked and shredded
  • 15oz. bag Nacho Cheese Doritos
  • 1 cup sour cream
  • 2 (10 oz.) cans condensed cream of chicken soup
  • 1 (10oz.) can Diced tomatoes and green chilies (Rotel) drained
  • 1 (15oz.) can whole kernel corn drained
  • 1 (15oz.) can black beans rinsed and drained
  • 1 oz. package taco seasoning
  • 2 cups cheddar cheese shredded

Instructions
 

  • Preheat the oven to 350 degrees. Spray a 9"x13" baking dish with nonstick spray. Set aside.
  • Crush chips and place half of them in the bottom of the casserole dish.
  • In a large mixing bowl, combine sour cream, soup, tomatoes, corn, black beans, taco seasoning, and 1 cup of cheese.
  • Add the shredded chicken and stir until combined.
  • Spread the mixture over the top of the chips in the baking dish. Top with remaining cheese and chips.
