In my house, it’s a favorite for Sunday dinner, a must-have on holiday tables, and my go-to on busy nights when I’m craving something cozy.

This hash brown casserole is simple to make, and with just a handful of ingredients and a few minutes of prep, you can have this mixed and in the oven within minutes. - 1 teaspoon Salt
- ½ teaspoon Pepper
- ½ cup Butter melted
- 1 (10.5 ounce can) Cream of Mushroom Soup
- 2 cups Sour Cream (16 ounces)
- 1 medium Onion diced
- 2 cups Cheddar Cheese shredded, divided

- Take hashbrowns out of the freezer and allow to thaw slightly. Just enough so you can mix in with other ingredients.
- Preheat oven to 350 degrees. Spray a 13 x 9 casserole dish with non-stick cooking spray.
- In a large bowl, mix the sour cream, cream of mushroom soup, melted butter, salt, and pepper.
- Stir in the onion and 1 cup of the shredded cheese until everything is well combined.

We make this around the holidays, like you said.. it’s a crowd pleaser and keeps nicely in a crockpot too! I add a package of onion soup in with ours too… gives it a little bit of a ‘cracker barrel’ flavor. I love how much cheese you add!!! I never used the cheddar soup, going to try this for sure!
