Fresh Tomato and Mozzarella Salad

I am always looking for something cool to eat during the summer months, and this Fresh Tomato and Mozzarella Salad satisfies my taste buds every time. With just a few ingredients, you will have a fresh, satisfying, and delicious salad on the table in no time flat!

This dish only needs tomatoes, cucumbers, onion, mozzarella pearls, avocado, and pesto sauce. It’s easy to make: chop, mix, and refrigerate.

Tomato and Mozzarella Salad is a beautiful and eye-catching salad and would be perfect for a family reunion or gathering or as a simple side dish for dinner. It makes a fascinating presentation on the table with minimal effort.

Chopping and mixing only takes minutes, and if you grab your teenage daughter to help, the time is cut in half.

Mozzarella cheese and avocado are so good together, and when you add basil…I’ll just leave it at that! This goes great with just about anything, especially grilled chicken and pork. I also had it with fish, and it was wonderful!

I like Basil Pesto. I use a lot of it in dishes regularly. In this dish, I used the whole 8-ounce jar. You feel free to use less if desired. Start with 4 ounces and go from there. If you taste it and it needs more, add more. I did. You do the same; you are the judge.

Ingredients Needed for this easy and delicious salad

1 pint red grape tomatoes, halved
2 avocados, diced
1 cucumber, diced
3/4 cup red onion, diced
1 package Fresh Mozzarella Pearls (8oz)
1 small jar (8 ounces) Basil Pesto- use less if desired.
2 Tablespoons lemon juice
salt and pepper to taste

How to Make Fresh Tomato and Mozzarella Salad

1. In a large bowl, combine halved grape tomatoes, diced avocados, diced cucumber, diced onion, and Mozzarella Pearls.
2. Add Basil Pesto and lemon juice to the salad and stir well until all is combined. Salt and pepper as desired. **Remember you are the judge of how much pesto to use. Start with 4 ounces and add more if desired.
3. Refrigerate until ready to serve. It will keep for several days in the refrigerator.
