Slow Cooker Rotel Dip {4 Ingredients}
Slow Cooker Rotel Dip is made with just 4 ingredients- hamburger, spicy sausage, Rotel tomatoes, and Velveeta cheese. It’s our go-to recipe for parties, ball games, or game nights at home.
This is probably one of those easy recipes that’s both popular with the family and easy to prepare—the best of both worlds. You just scramble and cook the meat and then dump everything into the slow cooker and turn it on.
What is Rotel Dip?
Rotel tomatoes are just diced tomatoes with green chilis. Rotel is the brand name, but you can also find generic brands that taste the same. It’s found in a can in the grocery store right next to the tomatoes. This little can has a big taste.

Ground Beef, cooked and scrambled
Ground Sausage, cooked and scrambled
Rotel Tomatoes, undrained
Velveeta Cheese, cut into cubes
Tips and Variations for the Best Slow Cooker Rotel Dip
Meat: You can use just ground beef or ground sausage for this recipe. I like to use a pound of each. You talk about flavor; this is it.
Spices– I have added just two tablespoons of taco seasoning to the meat as it cooks. You could also throw in some diced jalapenos to kick up the flavors a bit.
Cheese— I like to use Velveeta Cheese for this recipe. It always seems to melt the best and is so creamy and delicious.
Rotel Tomatoes— There are several brands very similar to the Rotel brand. I have used the store brand often, and they work just fine. I do not drain the cans. I like to have a little liquid in the slow cooker to thin out the cheese.
Cream Cheese— add a block of cream cheese along with the Velveeta.
Jalapenos— Dice up some fresh jalapenos and mix them in with the melted cheese.
Milk— if you find this dip is a little thicker than you like– add a little milk. Start with a tablespoon at a time until you get the desired consistency. It will thicken as it cools.
How to Make Rotel Dip
Scramble and cook the meat.
Place the cooked meat into the slow cooker and add the other ingredients.
Turn the slow cooker to low and let it go. In about 2 hours, you will have some delicious and cheesy dip. I like to give it a good stir every 30 minutes or so.
Once everything has melted, turn the slow cooker to warm and serve.
How to Serve Rotel Dip
You can serve this dip from your slow cooker. Just turn the setting to warm after the cheese has melted. This will keep everything warm and the cheese perfectly creamy. The cheese thickens as it cools, so keep the slow cooker on low or warm when serving at a party.

The best way to store leftover dip is in the refrigerator in an air-tight container. It should last for 3-4 days.
