- Pork Chops: I always use bone-in pork chops for this recipe. They are juicy, flavorful, and tender pork chops when baked.
- Butter: Use for browning the pork chops and to add flavor.
- Yellow Rice: This makes the dish flavorful. I love yellow rice over white rice any day. It’s colorful, buttery, and absorbs the juices.
- Onion Soup Mix: A packet of onion soup mix adds flavor and seasonings to the rice.
- Mushrooms: These are optional, but they add more texture and taste.
- Water: Used for cooking the rice. You could also use beef broth instead of water.
🔪 How to Make this Recipe
Baked Pork Chops and Rice is beyond simple to prep, and you will have it in the oven in minutes.

Step 1: Prep the dish. Spray a 13″ × 9″ casserole dish with nonstick spray.

Step 2: Brown the chops. Heat the butter in a large skillet over medium-high heat. Brown chops 2–3 minutes per side until lightly browned—this locks in flavor.

Step 3: Spread the yellow rice base. Spread uncooked rice evenly across the bottom of the prepared baking dish.

Step 4: Add soup Mix. Sprinkle the onion soup mix on top of the rice.

Step 5: Add Mushrooms. Drain and scatter the sliced mushrooms over the top of the rice mixture.

Step 6: Add Water. Pour 3 cups of water into the dish.

Step 7: Nestle the chops. Place the seared pork chops on top, gently pressing them into the water-soaked rice so they’re partly submerged.

Step 8: Bake. Cover tightly with foil and bake at 350 degrees for 45 minutes. Remove the foil and bake for an additional 10 minutes.

- Sear for Flavor: You are not fully cooking the chops, just sealing in the juices.
- Use yellow rice: Yellow Rice has so much flavor and makes this dish wonderful. Instant rice or minute rice will not work for this recipe.
- Mushrooms: Sometimes I use fresh mushrooms in this dish and sauté them slightly in the same pan I used to brown the pork chops.

- Refrigerator: Store any leftovers in an air-tight container in the fridge for 3-4 days.
- To reheat: Place leftovers on a microwave-safe dish and heat for a minute or two, or warm them in a 350 °F oven for about 15–20 minutes. Add a splash of water or broth to rehydrate the rice if needed.

Yes. You will need to cover the dish for the first 45 minutes while baking. This allows the rice to cook in the dish. Uncover and cook for the last 10 minutes.
I use bone-in pork chops for this recipe. They are more flavorful and cook nicely in the oven with the rice. You could use boneless pork chops, but you may need to adjust the cooking time slightly.
Browning the pork chops will lock in flavor and keep them from drying out in the oven. You can skip this step, but it only takes a few minutes to complete.

Pork Chops and Rice Casserole
Ingredients
- 4-6 Bone-In Pork Chops
- 2 Tablespoons Butter
- 10 oz. package Yellow Rice
- 1 envelope Onion Soup Mix
- 4 oz. can Mushrooms sliced
- 3 cups Hot Water
Instructions
- Spray the bottom of a 13" x 9" casserole dish.
- Melt butter in a skillet over medium-high heat. Add pork chops and brown for 2-3 minutes on each side. Remove from the skillet.
- Spread rice over the bottom of the prepared casserole dish.
- Sprinkle soup mix over the rice.
- Drain Mushrooms and spread evenly over the top of the rice.
- Add 3 cups of hot water to the dish.
- Arrange pork chops on top of the rice and water. Nestle chops down into the water a bit, covering slightly.
- Cover tightly with foil and bake at 350 degrees for 45 minutes. Remove foil and bake for 10 more minutes.
